Blackberry Coulis 'n Yogurt



Fruit yogurt is a very healthy and delightful snack. Never tried making it before. There are so many popular dairy brands in the stores that offer a wide range of delicious flavours. Coulis is nothing but fruit puree. Here we are blending blackberry with some honey and mixing it with yogurt. It is so simple that I am not even sure if I can call it a recipe!!

Blackberries are high in antioxidants and one of the most powerful disease fighting fruits. Colour pigments called anthocyanins give the berries their luscious purple colour. Protecting against cardiovascular diseases, promoting health of skin, bones, eyes and the digestive tract are some of the benefits of eating blackberries. Highly perishable, they usually have a very short shelf life once they are ripe. Tend to spoil easily even when stored in the fridge. So you have to use them up quite quickly which is what led me to experimenting with these berries :)

The below ingredients will yield two servings. We really enjoyed having this as dessert after a filling lunch.  Very refreshing and equally tasty - especially if you like yogurt. And then there is the satisfaction that it isn't loaded with calories unlike ice creams or pastries! You can try this with any fruit of your choice. I am sure it would turn out well.

Blackberry Coulis 'n Yogurt: Recipe

Ingredients:
  • Fresh blackberries - 10 to 15
  • Honey - 1 tbsp
  • Black grape marmalade - 1 tbsp (this is optional. I just added it to enhance the flavour)
  • Low fat yogurt - 1 cup
Method:
  1. Blend the blackberries, honey, marmalade and yogurt.
  2. Beat the yogurt well and add the fruit puree to it. Mix well. Serve chilled. How easy is tat!!
