Radish Stir Fry



I got a taste of this dish when I visited my hubby's parents last month. My hubby's mother is an amazing cook and definitely a person you can turn to for a variety of vegetarian recipes! I was telling her about how nutritious radish is and she told me - " I will make a dish for you. See if you like it". It was a pleasant surprise as I wouldn't have imagined  that radish stir fry can taste so good with rice - in fact it is a lot like cabbage stir fry but with a hint of earthiness and bitterness; the characteristic taste of radish.

I have rambled on about the health benefits (and their unbearable stench!) of radishes in my previous post - Mooli Paratha. Feel free to read it and you would be amazed at the benefits this rather pale vegetable has to offer. It is very simple to make this dish; minus the effort you put in to grate the radish - again, the stench is quite suffocating for me. I always wish I had a gas mask when I am grating it. No exaggeration folks! If you are using radish for the first time please don't be deterred by my uncaring remarks about this harmless vegetable which has only goodness to offer you :) The stench is easily removed by adding salt to the grated vegetable and then squeezing the water out. So enjoy radish with all its goodness and make it a regular part of your diets.

Radish Stir Fry: Recipe


Ingredients:
  • Radish - 4 medium grated
  • Onion - 1 large finely chopped
  • Green Chilli - 3 slit (spice alert!)
  • Fresh grated coconut - a handful 
  • Turmeric powder - 1/4 tsp
  • Cumin powder - 1/2 tsp
  • Salt to taste
  • Curry leaves - few sprigs
  • Mustard seeds - 1/ 4 tsp
  • Oil - 2 tbsp
Method:
  1. Add a pinch of salt to the grated radish and set aside for 15 to 20 mins. Then squeeze the water out.
  2. Heat oil in a wok and add the mustard seeds. Once they start to splutter add the curry leaves, green chillies and chopped onion. Saute for few minutes.
  3. Add the turmeric powder and the grated radish (after squeezing). Cover and cook til they are soft. Keep stirring from time to time so that they do not stick to the bottom of the wok.
  4. Add salt, cumin powder and grated coconut. Stir for few seconds and serve hot.
