Banana Pancakes:




I am usually lousy when it comes to preparing elaborate breakfasts (of course I would love to have dosa, idli, appam everyday!). So any easy (as well as healthy) recipe that makes a quick meal makes it to my list of brekkie recipes. 

Pancakes are a great way to begin the day. I used to buy ready made pancake mixes before I realised it is really simple to actually make the batter from scratch (Why go in for stuff with preservatives when you can use your own fresh ingredients). My only concern with pancakes though, is that they are usually made with maida or refined flour which basically doesn't give much in terms of nutrient value. I referred to many recipes and saw that there is no hard and fast rule to make pancake batter - there are so many versions for this ever popular dish! It is unlimited. Emboldened by this fact, I went ahead and tried my own recipe :D

Banana Pancake: Recipe


Ingredients (makes about 6-8 med size pancakes):
  • Whole wheat flour - 1 cup
  • Brown sugar - about 1/4 cup (I like it mildly sweet; the banana slices will give it more sweetness)
  • Salt -small pinch
  • Milk -  1 to 1.5 cup (or more as required)
  • Yoghurt - 2 tbsp
  • Ripe banana - 1 large, thinly sliced into rounds
  • Butter - a small cube
Method:
  1. Mix all the dry ingredients - flour, salt and sugar, with a wire whisk to blend everything together. Remove any lumps.
  2. Add the yoghurt followed by the milk - add it gradually and mix well to form a batter with slightly thick consistency (should not be too runny or very thick).
  3. Heat a non stick pan and rub a cube of butter on the surface to grease it we'll.
  4. Scoop a ladle of the batter and pour it into the centre of the pan. If the consistency is right the batter should spread slightly to form a medium sized pancake. Take few banana slices and press it gently onto the top surface of the pancake.
  5. When the bottom side is golden brown, flip it and let the other side cook. The banana slices will begin to caramalise which adds to the flavor of these pancakes but take care not to burn them as they will stick to the pan.
  6. Serve it hot with your favourite accompaniments - drizzle honey, add your favourite jam, serve it with fresh cream or with fresh fruits (if the batter tends to thicken as it sits, you can adjust the consistency by adding more milk to it).
