Coleslaw - Quick and Tasty Salad


Thanks to KFC, coleslaw is pretty popular. It is sweet yet tangy - very unique taste. My brother loves buns so I thought I will try making coleslaw as a side dish. In my search for a good recipe I bumped into the site called 'Top Secret Recipes'. Owned by Todd Wilbur, it is a very interesting site where they claim to have cloned many of the popular fast foods and restaurant recipes. He has even published many books. Todd Wilbur tried recreating many of his favourite recipes through relentless trials and finally he nailed them! What started off as a simple hobby then soon developed from a passion to a full time job and he is still at it; with many more books in the pipeline. Very interesting huh?

So I decided to try his recipe which claims to be a clone of the original KFC Coleslaw. Not disappointed I must say.  Does it taste like KFC coleslaw?? Well, in my husband's own words - " Looks... 99%....taste...nah! KFC is definitely better but your coleslaw is good. Tastes good with chicken." Probably if I had followed Todd's exact measurements  it would have tasted even better. Anyways, this is how I made my coleslaw. If there are any coleslaw fans out there, you must give this a try :)

Coleslaw - Recipe

Ingredients:
  • Fresh cabbage - shredded / grated about 2 cups
  • Fresh carrot - 1/2 of a medium size grated
  • Low fat milk - 4 to 5 tsp
  • Mayonnaise - 4 tsp
  • Low fat yogurt - 2 tsp
  • Sugar - 1.5 tsp
  • White vinegar - 1.25 tsp
  • Fresh lemon juice - 1.5 to 2 tsp
  • Salt - a large pinch
  • White pepper - a pinch
Method:
  1. Mix the grated cabbage and carrot together and set aside.
  2. Blend or whisk the milk, mayonnaise, yogurt, sugar, vinegar, lemon juice, salt and pepper to form a smooth dressing (Do a taste test and feel free to modify the flavours to suit your taste).
  3. Pour this dressing over the grated veggies and combine well.
  4. Refrigerate the salad for couple of hours and serve it with fresh buns or grilled chicken.

  5. I am sorry, but I LOATHE the coleslaw at KFC. Every time I get it from there, it tastes sour and..I don't know. Just not my cup of tea. But I DO like coleslaw, and yours looks great! I would eat it up in a flash
