My Crunchy Choffee Rocks ...

Well, blogging has definitely set my creative juices flowing! This recipe is purely from my imagination :D After making banoffee, I still have some of the Dolce de Lueche left in the fridge so been thinking about what else I can make with it. The sweetness of Dolce de Lueche, the bitterness of Dark chocolate and the crunchiness of nuts and bran flakes when combined do go well together and thus, I bring to you my 'Choffee' (chocolate + toffee) rocks! 

You can check out my recipe on Banoffee to see how I made Dolce de Lueche. I have used bitter dark chocolate with 74% cocoa. Its all about combining the ingredients together so don't worry about getting the measurements right. Feel free to add or reduce any of the below ingredients to suite your palate (quantity required also depends on the size of the rocks you are making). I must say that this is quite messy though unless you can find better means of doing this (I tried using spoons to scoop and coat the mixture but I found using my hands a lot easier!). Otherwise you can follow my method below and be ready to get your hands dirty - but definitely worth it :D

The addition of dark chocolate, nuts and bran flakes makes this a healthy alternative to munch on when you have a craving for something sweet or to top off a wonderful meal. I am not quite sure if kids will like the bitter taste of dark chocolate but you can still try or maybe even substitute dark chocolate with milk / sweet chocolate instead. The possibilities are countless. Now lets go and make few rocks shall we :)

Choffee Rocks: Recipe



Ingredients: (makes 4 medium rocks)
  • Dark chocolate (74% cocoa) - 60g
  • Bran flakes - 1 handful
  • Nuts like almond and walnuts - about 1/4 cup
  • Dolce de Lueche or toffee - 4 tbsp
Method:
  1. Gently crush the bran flakes with your hand. Don't make it too fine. It must be coarse.
  2. Roughly crush the nuts - best way would be to pound them with the back of a heavy knife. Again it should be coarse and not fine.
  3. Melt the dark chocolate in the microwave. Microwaves vary so the time will vary accordingly. For me it took slightly over a minute at high. You can set it for over a minute and then keep an eye on it so that it doesn't melt completely or starts to boil. It should just melt enough to form a creamy texture. Set aside for few minutes till it cools down. (No need to put it in the fridge.)
  4. Take a baking tray or any flat dish and place a baking paper on it.
  5. Then all you got to do is combine the ingredients and form the rocks. Add the nuts to the melted chocolate and mix gently. Take 1 tbsp (more if you like it more sweet) of the Dolce de Lueche and coat it with the chocolate nuts mixture. I used my hands to dip it into the chocolate mixture.
  6. Once coated, scoop it and roll it in the crushed bran flakes.  Once coated scoop it again and place it on the baking tray gently. Like this form the other rocks and once done, place the tray in the fridge. Refrigerate for at least an hour or till it hardens and serve.  
Pop one into your mouth, bite through the hard, nutty exterior and relish the soft chewy toffee centre. Hope you enjoy :)
