Quick and Easy Veg Wrap


I came across this fantastic wrap while browsing through the dishes on Foodbuzz recently. Though I usually make wraps with humus and fresh salad, the idea of adding sun dried tomatoes was new to me and the thought of combining creamy humus with the tangy sun dried tomato paste definitely seemed like a tasty combination (hats off to Betsy!). I have tweaked the recipe to my liking but the end product was awesome!! Now this is something I make regularly for dinner or lunch. After all it is that easy :) 

Veg Wrap : Recipe

Ingredients:
1. For Humus:
  • Canned chickpeas - 250gm
  • Garlic - 1 large pod crushed
  • Lemon juice - 1/2 lemon freshly squeezed
  • Tahina or roasted sesame paste - 4 heaped teaspoons
  • Salt to taste
  • Olive oil - as required
2. For Sun dried tomato spread:
  • Sun dried tomatoes (Store bought) - 10 to 12 large pieces, roughly chopped
  • Fresh basil - a handful
  • Olive oil - as required
  • Balsamic vinegar - 1 tsp
  • Salt to taste
  • Sumac - a large pinch
  • Garlic - 1 small pod
Pitta bread and stuffing of your choice (I used lettuce and ripe tomatoes) to make your wrap

Method:
  1. Blend the ingredients for humus (no.1) with a little amount of water till it is smooth and creamy. Do a taste test and adjust the salt and lemon juice as required.
  2. Blend the ingredients mentioned under no.2 to make the tangy sun dried tomato spread.
  3. Take a fresh pitta bread (toast it slightly on a pan for more taste), spread about a tablespoon of the sun dried tomato spread, followed by a generous spoonful of the freshly made humus. Then add stuffing of your choice - I added shredded lettuce and sliced tomatoes (you can also make a non vegetarian version by adding shredded chicken). Roll it up and your delicious wrap is ready in no time!
