Banana Walnut Muffins


I cannot resist from buying fresh, nearly - ripe bananas 'coz they are an easy way to tame my hunger pangs instantly; this is my strategy on lazy mornings when I am in no mood to cook, pop in few bananas and my tummy is full :D Okay, enough of my monkey business... So as always I got bananas this weekend thinking I will make some kind of dessert or shake but they were left lying in my pantry. Finally when I thought of using them I realized they are on the verge of becoming over ripe. I quickly started browsing through recipes hoping to find any easy way of using them up and stumbled upon this amazing blog - Simply Recipes!

A wonderful blog with so many recipes that I am dying to try, I saw this recipe for banana muffins which they have described as banana bread turned into muffins. And I must say they turned out so yummmm that I had this strong urge to finish them off in one go! I love the classic banana - walnut combo in anything. Crunchy tops and moist bottoms, these muffins are exactly how I want them to be and it is so incredibly simple to make these. The only change I have made is to use vegetable oil instead of melted butter. Rest of the recipe is exactly the same. Took me no more than 30 minutes!

Wrapped with care by nature in its yellow jacket, a single banana offers some of the important essential nutrients which is why I go bananas over them :D

Banana Walnut Muffins - Recipe:

Ingredients:
  • Ripe bananas - 4 smashed
  • Egg - 1
  • Vegetable oil - 1/3 cup
  • Caster sugar - 3/4 cup
  • Vanilla - 1 bean (or 1 tsp essence)
  • Salt - a pinch
  • All purpose flour - 1 and 1/2 cups
  • Walnuts - 1 cup roughly chopped
  • Baking soda - 1 tsp
Method:
  1. Preheat the oven to 180 deg C.
  2. Mix the vegetable oil and smashed bananas.
  3. Followed by the sugar. Mix well.
  4. Then mix in the egg and vanilla.
  5. Add the salt and baking soda and combine.
  6. Then incorporate the flour gradually and fold in gently just enough to mix it well. Fold in the chopped walnuts also. Do not over mix.
  7. Bake for 25 - 35 minutes till they are cooked. Insert a toothpick or fork at the center of the muffin and it should come out clean.
