Fruit Custard


An extremely simple and delightful dessert, this is something commonly made in most Indian households. Especially if you are having friends or family coming over for lunch then the usual menu is Biryani followed by Fruit custard :) I guess that's because both can be made in bulk. I have used ready made custard powder. So if you have enough fruits in hand then this is something that won't take long. It also makes for a guilt free dessert when you think about the variety of fruits you put into your system.

The kind of fruits that you can use is entirely your choice. Add in your favourite fruits of course, but also make sure you choose fruits with contrasting flavours and taste that will give a good balance of sweet and sour. Here I have used sweet, delicious mangoes, slightly sour yet crunchy Granny Smith apples and just ripe bananas. I prefer to make the custard and leave it in the fridge to cool and add the fruits just before serving. That way you can ensure the fruits don't brown or become mushy. Also I always prefer fresh fruits than canned!

Fruit Custard: Recipe


Ingredients:
  • Custard powder (I used Foster Clark's) - 2 level tbsp
  • Full fat fresh milk - 500 ml
  • Brown sugar - 3 tbsp (or more as per taste)
  • Fresh fruits - as per choice, diced (about 1 to 2 cups)
Method:
  1. Blend the custard powder with 2 tbsp of milk (taken from the 500 ml) till it is free from lumps and smooth. Set aside.
  2. Boil remaining milk with sugar. Keep stirring from time to time.
  3. Pour the boiling milk to the custard mixture and stir well to remove any lumps. It will form a silky texture. Allow it to cool and then leave it in the fridge until ready to serve.
  4. To serve, pour some custard into a bowl, followed by some diced fruits, followed by another layer of custard and then top it with more fruits (Use fruits with contrast colors to make it more attractive). Drizzle honey on top and serve immediately.
